Ronqueo of almadraba tuna


What is Ronqueo?

Ronqueo, the traditional cutting of the tuna, the term is derived from the noise made by the knife when it rubs against the backbone. In our restaurant we do an event where we show the ronqueo, we tell about tuna and its parts. We do it with a medium size tuna (which has better properties and taste) and then we serve fresh tuna to the table.
